May. 6th, 2009 12:49 pmI just made the most amazing granola of life. I found it in a GI cookbook. I love the GI and I've been sort of following it along with Weight Watchers and it's super helpful. I'm almost never hungry because the foods are so filling, nutritious and provide a slow energy burn. Yay!
Ingredients:
3 tbsp olive oil or coconut oil
3 tbsp Tahini
150g whole oats (I used organic jumbo oats)
2 tbsp dessicated coconut
2 tbsp sesame seeds
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
3 tbsp dried goji berries
1 tsp cinnamon
1 tsp ground ginger
3 tbsp Xylitol (or other vegetable derived natural sugar, even unrefined brown sugar works ... please don't use Splenda, I beg you)
Directions:
Heat a frying pan on a very low heat and add the olive oil. Let it slowly heat up (if you're using coconut oil, let it melt). Add the oats and cook them slowly, stirring to get all of the oil absorbed. I cooked mine for about 5 minutes until they were turning golden. Add the Tahini and stir for a minute, making sure the oats are coated evenly. Add all the other ingredients and stir.
Serves 4 people (serving side is 85g).
Top with organic, bio-live vanilla yogurt and prepare to DIE SO GOOD OMG. Also good with fresh strawberries or blueberries sliced on top.
